Spicy Pepitas – Vegan Protein

Feeling panicked about getting enough protein on a vegan or dairy free diet? Yep…so is everyone else who is on the fence about a vegan lifestyle.  Our culture is SO ENTRENCHED in the concept of a “meat and 2 vegetables” that many of us REALLY believe that meat is our best and only source of protein.

 

Enter the Pumpkin Seed. Nutrient Dense. High in protein. High in magnesium and fiber. Linked to reduced cancer risk and improved heart health.

 

It’s a powerful little seed.  And it’s seriously delicious.

 

Recipe

Ingredients:

1 Cup shelled pumpkin seeds

1 TBSP fresh lime juice

2 tsp chili powder

1 tsp salt

 

Instructions:

Preheat oven to 350.

In a small bowl toss the pumpkin seeds in the lime juice until well coated.

Season with chili powder and salt.

Spread pumpkin seeds out on a sheet pan and roast in the oven for 5 minutes.

Remove from oven and let cool.

Store in an airtight container and use to top salads with or snack on!
