I CAN’T WAIT to share the recipe for this Vegan Pumpkin Alfredo Pasta with you! It’s seriously incredible! I just have one little thing I need to touch on first:
I’ve been hearing a lot lately about people being annoyed with food blogs. Basically – Ya’ll don’t want to read someone’s life story, or 4 page dissertation on sunrises, or excessively long description of a trip to target. I get it. I really do. MOST OF THE TIME I skip the stories and scroll straight to the bottom of a blog post for the info I came for. That being said – I have a soft spot in my heart for good writing. I also really enjoy getting to know my very favorite bloggers via the stories in their blog posts. So, while I can’t promise to make EVERY post totally story free – I can agree to skip today’s story. This one goes out to all of you that are just here for the food. Enjoy.
Directions⠀

1. Place cashews, hemp seeds, nutritional yeast, salt, and garlic powder in a food processor. Process, scraping sides as needed, until finely ground and well incorporated.⠀

2. Cook pasta noodles as box/bag directs.⠀
⠀
3. In a large, deep skillet or a soup pot, melt vegan butter and saute minced garlic until fragrant.⠀
⠀
4. Add pumpkin puree and coconut cream. Stir well to fully incorporate. Simmer until thick and creamy - don’t rush, it WILL thicken up.⠀

5. Stir in 1/2 cup of the cashew/hemp/nutritional yeast “cheese” you blended up.⠀
⠀
6. Taste, and if desired: add 1 tsp sea salt and stir through.⠀

7. Place pasta noodles in bowl and add as much pumpkin alfredo sauce as you’d like. Top with course black pepper.⠀
