I am totally in love.  I eat a ton of salads, wraps, whole grain sandwiches, etc, and I LOVE to put things like ranch, salsa, and Italian dressing on them!  Salsa is pretty healthy, but we all know, your typical Italian dressing and ranch are NOT.  I try to eat healthy all week long and save my cheat days for the weekend, so I’ve been looking for a new tasty way to decorate my food.  Well….here it is people:  Avocado Dressing.  This stuff is SO addictive and I now keep it in a jar in my fridge AT ALL TIMES! I put it on everything and you can’t get healthier than SUPER FOOD avocados!  I have to thank (get ready for this) my brother’s girlfriend’s grandma for this one.  Yes…my brother Sam is dating his girlfriend Austin of 6 years (I hope I’m right on that number), and Austin got this recipe from her Grandmother! Now – me, Austin, and my mom are all so addicted to this stuff I had to share it with you.

 

 

 

 

 

 

 

 

 

The Recipe

1 Large Ripe Avocado

2 Tbsp. Oil (I use olive oil)

2 Tbsp. Lemon Juice

1/2 Tsp Sea Salt

Dash of Pepper

Dash of Chili Powder

Dash of Garlic Powder

HOW TO MAKE IT!

In a small mixing bowl, mash the avocado with a fork or masher.  Add all ingredients and beat together on low (or mix up in the food processor. Yeah….thats it….the EASIEST thing you’ve ever made.

My Spin:

Sometimes I use minced garlic instead of garlic powder.  I don’t know how politically food correct or incorrect this is….I just have alot of minced garlic in my house and I love it….it works for me haha.  I usually make this in larger batches because I eat it every day.  Typically I just triple the recipe and smash up 3 avocados at a time.  I also don’t ALWAYS beat the ingredients together…I like the little chunks of avocado, so sometimes I stick with my bowl and mashing fork, and just blend it all up by hand.  Its AMAZING both ways!

Nutrition Info:

So I use My Fitness Pal alot to keep up with my over-all health.  When I plugged this recipe in, I came out with 61 calories per Tbsp.! I usually put two Tbsp.’s on whatever I’m eating. As you can imagine, most of this reads as fat when you plug it into My Fitness Pal, but you have to remember, you’re eating the super food avocado, super healthy olive oil, and fresh lemon juice! SOOOO good for you! These are fats that you can definitely be happy about.
